
You want me to be honest here, I never used to be a big fan of pastries. Generally speaking, but certain pastry treats hold my heart, and cinnamon rolls happen to be one on the list! If you’ve been gluten-free most of your life like me, have been for a while now or are new to the club then you’ll know how difficult it can be to find quality desserts that simulate the real thing, like cinnamon rolls for example.
So, my treat to you, here’s my 5 minute microwave gluten-free/vegan cinnamon roll recipe!

For the dough, mix the mashed banana, all purpose flour, baking soda and almond milk together and knead, rolling out batter on a flat surface until thin and long.
Sprinkle dough throughout with as much coconut sugar as desired

For the filling, mix coconut sugar, coconut cream, vanilla and cinnamon in a bowl.
Refer back to the dough and grab one end of the dough carefully rolling to form one large ball of dough (there should be a swirl of coconut sugar in the center of the dough). Cut the ball into 4 seperate rolls and place rolls in a microwavable mug or bowl. Pour the filling mixture all over the rolls as desired. Heat for 1 minute 30 seconds in the microwave and enjoy!

5 Minute GF/Vegan Cinnamon Rolls

Gluten-free, Vegan, Fluffy, Gooey and only 5 MINUTES!
Ingredients
Dough

- 2-4 Tbsp Almond Milk (In Moderation)
Caramel Filling
- 2 Tbsp + 1/2 Tsp Coconut Sugar
- 2 Tsp Cinnamon
- 2 Tsp Vanilla Extract
- 1 Tbsp Coconut Cream (thick & hardened from can)
