So its no secret that virtually no-bake anything is my kinda recipe, especially in the world of desserts. My Chocolate Protein Fudge just verifies this reality. These are simply great to have on hand already made in the house, grab them out of the freezer and get creative for dessert (hence my Chunky Monkey milkshake recipe), for breakfast or as a pick-me-up snack.
I’m not joking when I say these take less then 10 minutes to whip up. They are gluten-free, vegan, and low glycemic and I’m proud to say that.

For this recipe I use square silicone molds, but you can use whatever shape mold you prefer! Head over to your kitchen and you’re gonna grab almond flour, nut butter (I use almond), nut milk (I use almond), maple syrup, chocolate protein powder (I use SunWarrior Vegan), and dark chocolate. Grease your molds with coconut oil and get ready to get your hands dirty!
For the protein base, combine almond flour, nut butter, nut milk, maple syrup and protein powder into a mixing bowl and whisk until thoroughly combined. Place the batter halfway into the mold, in each mold, then place the molds into the freezer for 10 minutes.

After 10 minutes, remove (the batter should be slightly solidified) and pour dark chocolate to fill up the rest of each mold. Top with topping of choice if desired (I used grainless granola). Place in the freezer for about 2 hours until completely solidified. Pop out of each mold and eat as desired (keep remaining pieces in freezer in a zip-loc bag)!
This is honestly one of the simplest no-bake recipes in my book! Personally, I pop these into my mouth post-workout or walk to rebuild muscle, I’ll add them to a nice cream, or even pair with a hearty breakfast for a little extra protein treat! However you use them, I’d love to hear what ya think!
