
One of the funny things about a lot of the recipes I create is that many of them are created spontaneously. Those type of recipes oftentimes end up being the best! My famous “Ultimate Vegan Hummus Wrap” (head over to the recipe here! https://theholistichero.com/ultimate-vegan-hummus-wrap/ ) was such a hit that I created the sandwich version as requested by everyone! Only difference is I added a big protein boost with Tempeh and excluded the tofu! At first I had to think a little about how I was going to create this one but it’s a relatively easy one to whip up! First of all, the main key is finding a good gluten-free bread which took me years to find. Although it’s not something I typically eat often at all, when I do I prefer “Cook’s Gluten-Free Sourdough Bread”. It’s vegan and designed for those with Celiac Disease, plus it’s got that sourdough taste all you gluten-free friends out there have been missing!
I cook this recipe very similarly to the way I cook the ingredients in the wrap. I begin by sauteing one tempeh steak (making sure it’s browned and thoroughly cooked) and my secret ingredient is black fermented garlic (Trader Joe’s has the best, though it’s difficult to find!) I also sautee mushrooms & sweet onions, setting those aside I brown the sides of of 2 pieces of bread. Once the bread is browned, spread avocado on one slice of bread and hummus on the other slice, place the tempeh steak on one of the slices and pile on the mushroom mixture along with sauerkraut. I also toss in broccoli sprouts like I do in the wraps but that’s definitely optional. Oregano is also one of my secret favorite spices along with the black garlic, and sometimes I add a splash of lime juice in to the mashed avocado before I spread it, just to give it that extra zing.

Place the other slice of bread on top, cut in half and stack! I promise you this sandwich DOES NOT disappoint! I was so excited with the final product and I can’t wait for you all to create your own! Triple Decker Tempeh-Kraut Sandwich

The ultimate sandwich version of my famous vegan hummus wrap!
Ingredients
- 2 Slices Gluten-Free Bread (preferably sourdough)
- 1 Tempeh Steak
- 1 Cup Mushrooms
- 1 Small Sweet Onion
- 1 Avocado
- 1 Tbsp Hummus (original chickpea)
- 1 Bunch Broccoli Sprouts
- 2 Tbsp Sauerkraut
- 1/2 Tsp Oregano, Sea Salt & Fermented Black Garlic
- 2 Tsp Lime Juice (optional)
Instructions
