
So, by now you’ve probably figured out that desserts are most certainly my forte. Honestly though I have a serious cobbler addiction. Now one of the beauties with cobbler is the freedom you have to mix and match and make it into whatever you’d like. Personally, cranberries, granny smiths and walnuts have always been my favorite combo but i’d love to hear all of yours! All right, lets get on with this jazz. Now, by all means I wouldn’t really consider this a “breakfast” worthy dish just because it does have some coconut sugar in it but of course thats up to you.
The reason I consider it “healthier” is because most cobbler recipes call for LOADS of white sugar, while mine is less than half that, uses coconut sugar alternative, a cassava root flour alternative, and more nuts to give it an omega boost. To me, it’s the perfect dessert thats not nauseatingly sweet and actually leaves me feeling quite full after just a few bites. If you’re avoiding grains you can absolutely remove or substitute the oats with a nut mixture. I’ve noticed many people wonder why granny smith apples are the traditional selection for cobbler!? It’s because the tartness beautifully balances the flavors and they hold their shape well. This doesn’t mean you have to use those, but I highly recommend with this particular recipe.

For this recipe you’ll be using granny smiths, cranberries, coconut sugar, cassava flour, cinnamon, nutmeg, ginger, lemon juice, vanilla and sea salt for the filling. For the crumble topping, the same ingredients plus rolled oats, all purpose gluten-free flour (I like Bob’s Red Mill, but the one with fava bean powder in it), walnuts, coconut oil, almond flour and baking powder.
Begin by Preheating the oven to 355 degrees Fahrenheit (180 Celcius) and lightly grease baking dish with coconut oil. Combine all filling ingredients in large bowl, plus 2 tablespoons of water to make sure all apple pieces and cranberries are evenly coated.
Evenly spread the apple cranberry filling mixture in an approximately 31cm x 21cm (12.2 inches x 8.27 inches) baking dish and set aside.
For the topping (crumble) take the bowl used for the filling and combine all the topping ingredients plus another 2 tablespoons of water. Mix well and evenly, using your hands if needed.
Crumb and sprinkle the topping (crumble mixture) over the apples evenly and put in the oven to bake for around 45-50 minutes.
Serve warm with some vegan ice cream, coconut cream, or yogurt. A little secret is this recipe tastes even better (in my opinion) cold and plain! Cassava Cranberry Apple Cobbler (GF+V)

My healthier take on my favorite classic. Gooey, crispy & delectable!
Ingredients
- Filling
- 5 Large Granny Smith Apples (cored, peeled & chopped)
- 1/2 Cup Cranberries (defrosted)
- 1/4 Cup Coconut Sugar
- 1/4 Cup Cassava Flour (I used Bob's Red Mill)
- 1 1/2 Tsp Cinnamon (ground)
- 1/2 Tsp Nutmeg (ground)
- 1 Tbsp Lemon Juice
- 1/4 Tsp Sea Salt
- 1 1/2 Tsp Vanilla Extract
Topping
- 1 Cup Almond Flour (not meal)
- 1 Cup All Purpose Gluten-Free Flour (I used Bob's Red Mill w fava bean)
- 1 Cup Rolled Oats (gluten-free)
- 1/2 Cup Chopped Walnuts (or pecans)
- 1/4 Cup Coconut Sugar
- 1/2 Cup + 2 Tbsp Coconut Oil (melted but measured while solid)
- 1/2 Tsp Baking Powder
- 1 Tsp Cinnamon (ground)
- Pinch of Sea Salt
- 1 Tsp Vanilla Extract
