
So, you may have already discovered or created your own version of my “Guiltless Cookie Dough Nice Cream”. As I promised, if you’re only interested in the cookie dough, minus the nice cream base. This is the place for you so you won’t have to go through the entire nice cream recipe to find it. Don’t worry I’ve got your cookie dough needs covered 🙂
I know I’m not the only one who loves cookie dough, or at least drools at the idea of hiding in a corner shamelessly eating “half prepared” dough with a spoon, or even finger for that matter (or maybe that’s just me spilling my guts out there). Cookie dough often brings me back to those moments in the kitchen when you just can’t restrain yourself any longer, and dig in without having finished the meal, because let’s face it cookie dough has that effect.

Like many of my recipes, I prefer using a food processor to get the job done. In order to make this cookie dough edible and vegan, of course it’s EGG and DAIRY FREE. Using almond flour and cashew butter alternatives provides higher protein, and a creamy texture with that extra bit of sweetness. The full recipe details are waiting for you just below.
Basically, I add all the base ingredients aside from the chocolate chips into a food processor, and process until smooth or if you prefer a bit of chunk, process to your liking. To keep the chocolate chips intact, I fold those into the mixture afterwards. You can also change things up and use Carob Chips which work just as well with this recipe! I LOVE carob and it’s a great alternative to chocolate/caffeine if you’re trying to avoid it!

Edible Cookie Dough

It's a classic, and this one is edible, vegan, gluten-free, salmonella free, and boy oh boy is it gooooood
Ingredients
- 1/2 Cup Cashew Butter
- 1/4 Cup Maple Syrup
- 1/3 Cup Blanched Almond Flour
- 1 Tsp Vanilla Extract
- 1/4 Tsp Cinnamon
- 1/4 Tsp Fine Sea Salt
- 1/3 Cup Chocolate Chips (or carob)
Instructions
- Add all cookie dough ingredients in food processor, expect for chocolate chips
- Once a gooey, nut butter like consistency is reached, fold in chocolate chips
- Scoop into a bowl and pig out in your own style 🙂
