
You want to know a secret? This isn’t an original recipe, but I have taken the original and “doctored it up” Holistic Hero style. So this original batter mix is actually from Trader Joes’ “Almond Flour Chocolate Chip Cookie Baking Mix” which is vegan, gluten-free and relatively low in sugar. It’s also actually sort of “flourless” and is so easy to whip up considering you only need to add 3 ingredients to the flour mix (which contains coconut sugar, almond flour, semi-sweet chocolate chips, tapioca starch, coconut flour and baking soda). It only takes 10 minutes to actually bake!

Adding almond milk, vanilla extract, coconut oil, almond butter and sea salt to the mix. Stir it all up and place tablespoon sized balls on a baking sheet with parchment paper. Flatten out the batter on the sheet and preheat the oven to 350 degrees, placing the tray in for 10 minutes until crispy.

YAASSS, look at those golden, crispy, chocolatey circles of cookie heaven. I’m honestly in love with this batter mix, and you can add and detract to make them uniquely your own!

Basically, if you find me in Trader Joe’s in the baking isle hoarding these boxes you’ll know why. Good luck beating me to it my friends! These were an invention from heaven (no drama there). TJ’s had actually stopped carrying these until they realized how high the demand was for an easy, quick, GF/Vegan backing mix derived from almonds. When they came back, they came back full force. To those of you who have listed the boxes on Ebay for $20, you can take those listings down (grinny face).

Crispy Almond Chocolate Chip Cookies

Damn... crispy edges, gooey chocolate-filled center and a whole lotta almondy goodness. OM NOM NOM
Ingredients
- 1 Box Trader Joe's "Almond Flour Chocolate Chip Cookie Baking Mix"
- 3 Tbsp Melted Coconut Oil
- 3 Tbsp Almond Milk
- 2 Tsp Vanilla Extract
- 1 Tsp Fine Sea Salt
- 1 Tbsp Almond Butter
Instructions
- Preheat oven to 350 degrees
- Add all ingredients (coconut oil, almond milk, sea salt, vanilla and almond butter) into a bowl, and stir
- Add the Almond Flour Mix with the wet ingredients
- Place Tablespoon sized balls of the mixture onto a baking sheet lined with parchment paper and flatten with a spoon until flat
- Bake for 10 minutes until crispy
- Remove and let cool on a cooling rack for another 10 minutes and enjoy!
