
Nice creams are like blank canvas of creation opportunities, kinda like my “Cotton Candy Nice Cream Parfait”. I wanted to create a unique spin on a classic favorite of mine. I have to admit, before my holistic hero days, way back when I was a pee wee, Disneyland cotton candy and popcorn was my tthhaaanngg. Now that I look back, I can’t believe I used to willingly stuff my face with blue and red dye number whatever, but hey what can ya do!
Cotton candy flavored jellybeans, ice creams, or classic on a stick. It was that melt in your mouth, creamy goodness that made me melt. You don’t really find cotton candy flavored anything, somewhat healthy these days. I figured, why not create a nice cream that makes my cotton candy dreams come true?!

How I make my “strawberries & nice cream” (strawberries & cream) is similar to how I make this one. I’m not big on soy, but I do enjoy a good tofu scramble every once in a while. Soy milk makes anything extra thick, with that sweet creamy flavor and texture, which is why I use it to resemble a “cream” flavor. Macadamia nut milk is my other alternative in this recipe, but soy is my base. If you want that blue and pink cotton candy, I like to add blue spiraling powder to the yogurt mix. Otherwise, I keep it classic.

Cotton Candy Nice Cream Parfait

Creamy, dreamy and cotton candy! A vegan take on a childhood favorite
Ingredients
- 3 Frozen Bananas
- 1/2 Cup Frozen Strawberries
- 1/2 Cup Frozen Peaches
- 1 Cup Soy Milk (or) Macadamia Nut Milk
- 2 Tsp Vanilla Extract
- 1 Cup Vanilla Nut Yogurt (of choice)
- For Blue & Pink Cotton Candy, 2 Tsp Blue Spirulina Powder
Instructions
1. Add the frozen bananas, peaches, strawberries, vanilla extract and milk into a high-powered blender, and blend until thick and creamy
2. Layer nice cream mixture with vanilla yogurt into a glass or bowl. Add blue spirulina powder into the vanilla yogurt for blue & pink "cotton candy"
3. Layer with granola of choice or fruit and enjoy!
