
Drama-free zone, this is literally one of my most celebrated recipes and for good reason. It’s a light yet SUPER freaking creamy, subtle yet flavor-filled fresh take on pesto and I’m OBSESSED. The best part about this recipe is you’ll most likely have a chunk of these ingredients laying around your kitchen already! It’s super easy to whip up and I’m so excited for you to add this one to your recipe books!
Your main ingredients are simply avocado, basil, spinach, lemon juice, cashews, olive oil and plant milk as well as garlic cloves, black pepper and sea salt. You can also add apple cider vinegar for a little extra flavor punch but it’s optional.

Pesto has always been one of those childhood comfort foods that I still adore, similar to my mac and cheese addiction. I can almost guarantee I’m not alone there! Ok, on to the good stuff.
To begin you can use a food processor or any high-tech blender. The great thing about this recipe is you don’t need anything fancy to get the job done of getting that mega creamy texture, all thanks to that avocado, any blender will do. Begin by placing all your ingredients in and blend until smooth and creamy. As I mentioned, apple cider vinegar is optional, this addition tablespoon is for an extra flavor punch if needed.

Creamy Avocado Pesto

It's Green Gold. Literally. Soak up in this creamy, fresh take on pesto
Ingredients
- 1 Medium Sized Avocado
- 1/2 Cup Spinach
- 1 Lemon Squeezed
- 1/2 Cup Cashews
- 1/2 Bunch Fresh Basil
- 2 Garlic Cloves (peeled)
- 1/2 Cup Olive Oil
- 1 Cup Plant Milk
- 1 Tsp Black Pepper
- 1 Tsp Sea Salt
- 1 Tbsp Apple Cider Vinegar (optional)
Instructions
- Add all ingredients into blender or food processor and blend until smooth and creamy texture is reached
- Add to pasta of choice and enjoy!
