
I’m gonna be honest with you guys. It’s actually really difficult for me to even write about this recipe of mine of even upload pictures because my addiction to pistachio ice cream is so real, that it comes back instantly when I’m reminded of this creamy, sweet and nutty goodness in this bowl.
If you’re a vegan or just a lover of the nice cream world, you know what nice cream is. Just in case you’ve been living under the nice cream rock, the base is brought to you by nanners themselves. I’ve seen and consumed many many nice cream flavors, but I’ve had yet to see a pistachio one, or at least they are on the rare side. I personally believe pistachios have been neglected more than they should be, and I want to bring them to the nice cream club!

Making nice cream is so incredibly simple, which is another reason I love it so much. I guarantee, once you make your first, you’ll be hooked for life. You may even ditch dairy for good, because you’ll realize it’s not an essential to create a creamy ice cream! No hormones, no inflammation, no excessive sugar, no harming animals, it’s a win win.
Something else I love about this recipe? It’s a complete creative canvas! You can add matcha green tea powder or even extra fruits like strawberries to switch up the taste or add a booster, but still maintain that unique pistachio taste.

Yup, as is a custom part of “HH”, sometimes I’ll shamelessly incorporate some of my favorite fictional characters into my recipes. I’ve got Luigi in here joining the club. This actually ties into a childhood story. It’s short, I promise.
I used to snack on pistachios ALL THE FRIGGIN TIME as a child. I called them “chos”, and would often demand I have them at the most random of times. I’m a sucker for certain video games, even now as a grown woman! Super Mario Bros and Mario Kart were two of my favorites as a child, and sometimes I’d play with my little step-brother; we were addicted. But what I remember most was the oddity that I always chose to snack on pistachios whenever I played. Thus, my reason behind dedicating this recipe to my bro Luigi. Don’t judge 🙂

Luigi's Pistachio Nice Cream

Ever had that strange, specific craving for pistachio ice cream? Maybe not, but let me introduce you to the exciting world of a pistachio ice cream addiction. You'll either thank me or curse me later...
Ingredients
- 4 Frozen Bananas
- 1 1/2 Tbsp Pistachio Nuts
- 1/4 Cup Coconut Cream
- 1 Tbsp Almond Milk (or coconut milk)
- 2 Tsp Vanilla Extract
- 1 Tsp Sea Salt
Instructions
- Add bananas, coconut cream and milk into food processor and process until smooth (you may need to add milk slowly at a time in order to help blend)
- Add the rest of the ingredients and process again
- Scoop into bowl and top with pistachios or sea salt and enjoy!
