
Who doesn’t love pizza, right? It’s one of those comfort foods that other foods just can’t compete with, except avocado toast but lets not get carried away 🙂 Spaghetti squash has always been one of those foods that I love, so I figured why not turn the squash into some sort of pizza.
Preheat oven to 400 degrees Fahrenheit.Clean squash thoroughly then slice in half to uniform thickness, about 1/4 of an inch depending on the squash. Scoop out the seeds and ribbing. Place on kitchen sheet pan and drizzle with olive oil. Sprinkle with salt. Place in oven and cut side down on the baking sheet and use a fork to poke holes. Roast for 30 to 40 minutes or until light browning forms on the outside, fork tender, but still a little bit firm. The time will vary depending on the size of your squash. Remove from oven and scrape the inside of the squash until squash strings appear.Top with marinara sauce of choice, mushrooms, onions, red pepper and place back in oven for 5-10 minutesRemove and let cool, placing mozzarella cheese (vegan cheese works too) and basil. Serve as is, and be careful not to burn your tongue 🙂
Spaghetti Squash Pizza Boats

My new favorite take on pizza, without the grains cause who doesn't love pizza
Ingredients
- 1 (med sized) spaghetti squash
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1 cup marinara sauce (of choice)
- 1/3 cup sliced mushrooms (optional)
- 1/3 cup red bell pepper
- 1 handful fresh basil
- mozzarella cheese (vegan or dairy works)
