I say I’m a sucker for pretty much anything edible, gluten-free, sweet and delectable. But I went BONKERS when I was able to breakthrough and create the perfect Nice Cream that legit tastes like Strawberries & Cream, with that same perfect creamy texture and consistency which we all love!
Just in case you weren’t aware in the world of nice cream, the base which makes it vegan and creamy is brought to you by nanners themselves. What’s my secret to creating that “cream” like taste outside of a banana base you ask? The answer may surprise you, and even upset you as this one ingredient holds a controversial reputation. But it’s what makes this particular nice cream SUPER HIGH in protein, creamy, and thick. The answer is a Soy Milk base. Yup, I said it and while soy has been deemed as hormone/thyroid disrupting legume, it has actually been used to balance blood sugar and provide high amounts of protein and vitamins A, B and D. Unless you have an allergy, don’t even bother reading the rest of this paragraph. Aside from this, I personally use soy milk on occasion as a treat like in this case or even during “that time of the month” to boost estrogen when I need to. But fear not, if you’re totally anti-soy I understand and I’ve got you covered! In the recipe legend I’ve also provided a macadamia nut milk base alternative if you’d prefer to leave soy milk at the supermarket!
I typically prefer to create my Nice Cream concoctions using a food processor, just because it blends the banana base in a more precise manner than blenders do. It’s also easier and less messy. That’s just my personal opinion, I use a Vitamix blender and still prefer a food processor.
Adding all ingredients into the food processor and blending until smooth and thick, simply scoop out, place into a bowl or glass and top away!
I just want to put it out there, that “Bulletproof Brain Octane Oil” has become a critical part of my daily smoothies and on occasion I’ll add it to my Nice Creams for added brain fuel and extra longevity and energy, as a form of high-potency MCT’s. This is why I’ve added it in this particular recipe, and I’m very proud that it works so well in this blend!

I tend to top my Nice Creams either with fresh fruit, extra booster-powders like lucuma, acai, goji berry, or Vitamin C. In this case I’ve used Purely Elizabeth’s Grain-Free Almond-Butter Granola!

Strawberries & Nice Cream

Thick, creamy, light and fresh. Perfect in every way and I've taken pride in this nice creams' exact s&c taste!
Ingredients
- 3 Frozen Bananas
- 1 Cup Frozen Strawberries
- 1/3 Cup Soy or Macadamia Milk (I used Soy)
- 3 Tsp Vanilla Extract
- 1 Tsp Sea Salt
- 1 Tbsp "Bulletproof" MCT oil (optional)
- 2 Tsp Buffered Vitamin C Powder (optional)
Toppings
- Granola (I use Purely Elizabeth Grain-Free Almond Butter Vanilla)
- Fresh Fruit
- Vitamin C powder
- Immune Powders (Lucuma, Goji, Coconut)
Instructions
- Place frozen fruit and milk of choice in food processor, and process until smooth
- Add vanilla, salt, MCT oil and Vit.C poweder (optional) in processor, and blend again until smooth
- Scoop out with ice cream scoop or spatula, place in bowl or glass then top away!
Notes
TIP: It helps to add teaspoons of milk if the consistency of the nice cream is too thick to process while in the food processor, but don't go overboard or you'll lose that thick/creamy consistency!
You can read why I prefer soy milk for this particular recipe above, but in simpler words, it adds a thick/creamy texture/taste synonymous with the classic strawberries & cream taste. But the ball is in your court my friends. Macadamia nut milk is just as satisfying without the added estrogen boost if that's what you're trying to avoid or if you have a soy allergy.
