I’m TRULY proud of this one guys. It’s funny cause one of my favorite creations is rooted in a bad day where I was strapped for time, and couldn’t really find anything in the fridge that would make a nutritious meal for the day ahead. And alas, I found some broccoli sprouts in the back of the fridge, some mushrooms and avocado that needed to be used, and started putting my creative brains together.
I honestly can’t get enough of these! I’ve even made them and had them stolen right off my plate! Sometimes I think my friends are only there for the foodie creations, lol. My hummus wraps have become a trademark classic recipe of mine, that if you know me or come over, you will have tried one of these.

I’ve often described them as layers of heaven, and I’m NOT over exaggerating! Head over to my Instagram, and I’ve got a fun little reel on there on how to whip these up in minutes! Generally speaking though, if you’ve got tofu, some avocado, mushrooms, onions, hummus, broccoli sprouts and some sauerkraut you’re ready to go! For the actual wrap portion I like Mikey’s GF Cassava Coconut Flour wraps!
Grab a wrap, cut the bottom in half (making a flap), in one quadrant spread some hummus and top with sautéed onions & mushrooms, in the second slap on some sauerkraut, in the third spread guacamole, and in the fourth add scrambled tofu and top with broccoli sprouts.

When you’ve got all those ingredients in their quadrant of choice, take the bottom left flap, fold over the top left, then fold to the right and again to the bottom. The reel on my Instagram account will make this step clearer, it’s super easy!
Place the folded wrap onto a griddle or heated pan (I usually add it to the already heated pan I used to sautée the mushrooms, tofu and onions), add some olive oil to the pan and flip, crisping both sides of the wrap.

Oregano is like my go-to spice for most foodie matters, so I not only add it to the mushroom, tofu, onion mix when I sautée, but I sprinkle it on top too just for an extra flavor bomb! I would LOVE to hear whatcha think! I hope these become a favorite of yours too, and remember that an empty looking fridge can be quite deceiving… That’s a wrap folks! (pun intended)
