
So Pad Thai and Pad See Ew are two of my favorite Thai dishes. My homemade miso sauce is honestly so good and so easy to whip up that I make this dish quite often, especially on nights where I need something quick to whip up. This recipe is also super versatile in the sense that you can use any veggie/ protein mixture you desire! I just personally love this mixture.
I use green beans, carrots, broccoli or broccolini, mushrooms, and tofu. I cook them all together, but first I sautee the tofu in fresh garlic and my secret, “Bragg’s Ginger Sesame Dressing” which I’ve linked here https://www.bragg.com/products/organic-ginger-sesame-dressing?variant=39616920518752
This makes the tofu crispy and flavorful on their own before you even add in the veggies. While thats all cooking, I make the sauce which is the key to making this recipe so freaking delectable!

The sauce is simply red miso paste, tahini, almond butter and water. Add in 2 tablespoons of red miso paste. I love “Miso Master” but you can use any, 1 tablespoon tahini and 1 teaspoon almond butter which adds a dash of thick sweetness. Now the key is to add in the water slowly and a little at a time as you whisk the mixture together. You’ll know when you’ve added enough because the sauce will be thick enough but not runny/ watery. So I stress the fact that you should add bits in slowly at a time in order to achieve a better texture!
Once your sauce is ready, pour it over your noodles and veggies and mix! I like to sprinkle on sesame seeds and an extra pinch of salt on mine. It’s like a creamy flavor-bomb with the chewiness of the noodles and crunch of the veggies. Ugggghhh, I’m in heaven. Ingredients
- 2 Tbsp Red Mis Paste
- 1 Tbsp Tahini
- 1 Tsp Almond Butter
- 1/3 Cup Water
New Group
- For The Mixture
- Broccoli
- Shredded Carrots
- Green Beans
- 2 Garlic Cloves
- Cubed Tofu
- Mushrooms
Instructions
- Begin by sauteeing veggies, tofu and garlic until brown and crispy
- To make the sauce, add red miso paste, tahini and almond butter into bowl and whisk slowly while adding small bits of water until smooth texture is achieved.
- Make sure to only add small bits of water in at a time so the sauce isn't too runny or thick but just right
- Pour sauce over pad see ew noodles and veggie/tofu mixture and serve warm/ enjoy!
